Ingredients:

2 cups SpicenEasy Pinto Beans
-
1 large onion, quartered
-
3 cloves garlic, smashed
-
2 tbsp SpicenEasy Lard or vegetable oil
-
1 tsp SpicenEasy Ground Cumin
-
1 tsp SpicenEasy Chilli Powder
-
Salt to taste

Optional: 1-2 dried bay leaves for cooking beans
Instructions:

Soak Beans: Rinse beans and soak overnight in plenty of water. Drain and rinse.

Cook Beans: Place soaked beans in a large pot with onion, garlic, and bay leaves (if using). Cover with fresh water by 5cm. Bring to a boil, then simmer for 1.5-2 hours until very tender. Drain, reserving 1-2 cups of cooking liquid.

Sauté Flavours: In a large skillet, heat lard or oil over medium heat. Add cumin and chilli powder, cooking for 30 seconds until fragrant.

Mash and Fry: Add the cooked beans to the skillet (remove bay leaves). Mash with a potato masher or back of a spoon, adding reserved bean liquid until you reach your desired consistency.

Season and Serve: Cook for 5-10 minutes, stirring frequently, until heated through and flavours meld. Season generously with salt. Serve warm.
Chef's Tip: For authentic flavour, use lard – it makes a significant difference! Don't skip soaking the beans; it reduces cooking time and makes them easier to digest. The reserved bean cooking liquid (aquafaba) is gold – use it to achieve the perfect creamy texture. These beans freeze beautifully for up to 3 months.
