  • Prep Time: 5 minutes (+ 30 minutes resting)

  • Cook Time: 10-15 minutes

  • Serves: 2-3 (makes one 25cm flatbread)

Ingredients:

  • 1 cup SpicenEasy Chickpea Flour

  • 1 cup + 2 tbsp water

  • 1.5 tbsp olive oil, plus extra for the pan

  • ½ tsp salt

  • ¼ tsp SpicenEasy Ground Cumin (optional)

  • ¼ tsp freshly ground black pepper

  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried)

Instructions:

  1. Make the Batter: In a medium bowl, whisk together the chickpea flour, water, 1.5 tbsp olive oil, salt, cumin, and pepper until smooth. The batter should be the consistency of thin cream.

  2. Rest the Batter: Let the batter rest for at least 30 minutes at room temperature. This is a crucial step for the best texture!

  3. Heat the Pan: Place a well-seasoned cast-iron skillet or oven-safe frying pan under a grill (broiler) to heat up. Alternatively, preheat your oven to 240°C. Once hot, carefully remove the pan and add a generous tablespoon of olive oil, swirling to coat.

  4. Cook: Pour the batter into the hot, oiled pan. Sprinkle with rosemary. Return to the grill/oven and cook for 8-12 minutes, until the edges are crisp and the surface is set and spotted with golden brown.

  5. Serve: Slide the socca out of the pan. Serve immediately, cut into wedges. Perfect with dips, salads, or soups.

Chef's Tip: A hot pan is the secret to a crispy socca! Don't skip the resting time – it allows the flour to fully hydrate and results in a better texture. For a flavour boost, add fried onions, sliced olives, or sun-dried tomatoes to the batter before cooking. Socca is best eaten fresh from the pan.
