Recipe for Xanthan Gum
Silky Vegan Caesar Dressing (Uses Xanthan Gum for Perfect Texture)
(Makes ~1 cup)
Ingredients:

½ cup raw cashews (soaked 2+ hours or boiled 10 mins)

¼ cup water

2 tbsp lemon juice
-
1 tbsp Dijon mustard

1 small garlic clove
-
2 tsp capers (or 1 tsp anchovy paste for non-vegan)

½ tsp xanthan gum (key for thickness!)

½ tsp salt

¼ tsp black pepper

2 tbsp nutritional yeast (optional, for cheesiness)
Instructions:

Blend base – Drain cashews, then blend with water, lemon juice, mustard, garlic, and capers until ultra-smooth.

Activate xanthan gum – With blender running on low, sprinkle in xanthan gum and blend for 10 seconds (it thickens instantly!).

Season – Add salt, pepper, and nutritional yeast. Adjust tang with more lemon if needed.

Store – Keeps in the fridge for 1 week. Thins when chilled—just stir before use.
