Savory Pea Flour Pancakes (Besan Chilla) (Indian-Style Vegan Omelette)
(Serves 2–3)
Ingredients:

1 cup pea flour (gram flour/besan)

½ cup water (adjust for batter consistency)

½ tsp turmeric

½ tsp cumin powder
-
½ tsp red chili powder (optional)

½ tsp salt (adjust to taste)

¼ cup finely chopped onions

¼ cup chopped tomatoes
-
¼ cup chopped cilantro (coriander leaves)

1 small green chili, finely chopped (optional)

1 tbsp oil (for cooking)
Instructions:

Make the batter – In a bowl, mix pea flour, turmeric, cumin, chili powder, salt, and water to form a smooth, slightly thin batter (like pancake batter).

Add veggies – Stir in onions, tomatoes, cilantro, and green chili.

Cook the pancakes – Heat a non-stick pan on medium, lightly grease with oil. Pour a ladleful of batter, spread gently into a thin circle.

Cook until golden – Drizzle a little oil around the edges. Flip after 2–3 mins and cook the other side until crisp.

Serve hot – Enjoy with mint chutney, yogurt, or ketchup!
