Classic Breaded Pork Chops (or Chicken) (Serves 4)

Perfect for: Weeknight dinners, sandwiches (like Milanese), or meal prep

Ingredients:

  • pork chops (or chicken breasts, pounded to ½-inch thickness)

  • 1 cup fine white breadcrumbs (plain or seasoned)

  • ½ cup all-purpose flour

  • eggs, beaten

  • ½ cup grated Parmesan cheese (optional, for extra flavor)

  • 1 tsp garlic powder

  • 1 tsp dried Italian herbs (or parsley + oregano)

  • 1 tsp salt

  • ½ tsp black pepper

  • Olive oil or butter (for frying)

  • Lemon wedges (for serving)

Instructions:

  1. Prep the meat:

    • Pound chops/cutlets to even thickness (for even cooking).

    • Pat dry and season with salt and pepper.

  2. Breading station:

    • Set up 3 shallow bowls:

      1. Flour (mixed with garlic powder)

      2. Beaten eggs

      3. Breadcrumbs (mixed with Parmesan and herbs)

  3. Bread the chops:

    • Dredge in flour → dip in egg → coat with breadcrumb mixture, pressing gently to adhere.

  4. Pan-fry to perfection:

    • Heat ¼-inch oil/butter in a skillet over medium heat.

    • Fry 3-4 mins per side until golden brown and internal temp reaches 145°F (63°C) for pork or 165°F (74°C) for chicken.
