Recipe for Chopped Peanuts
Peanut Brittle
Ingredients:

1 cup granulated sugar

½ cup light corn syrup
-
¼ cup water
-
1 cup chopped peanuts (unsalted or lightly salted)

1 tbsp butter
-
1 tsp vanilla extract
-
1 tsp baking soda
-
A pinch of salt
Instructions:

Prepare the Pan: Lightly grease a baking sheet or line it with parchment paper.

Cook Sugar Mixture: In a medium saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring until sugar dissolves.

Boil Without Stirring: Once boiling, stop stirring and let it cook until the mixture reaches 300°F (hard crack stage) on a candy thermometer (~10–15 mins).

Add Peanuts & Butter: Stir in chopped peanuts and butter, cooking for another 2–3 minutes until golden brown.

Finish with Baking Soda: Remove from heat, quickly stir in vanilla and baking soda (this makes it light and airy).

Spread & Cool: Pour onto the prepared sheet, spreading thinly. Let cool completely (~30 mins), then break into pieces.
