Ingredients:

  • 1 cup SpicenEasy Sago Pearls

  • 1 can (400ml) coconut milk

  • ½ cup water

  • ⅓ cup sugar (or to taste)

  • Pinch of salt

  • Optional toppings: Fresh mango cubes, lychees, or toasted coconut flakes

Instructions:

  1. Cook Sago: Bring a large pot of water to a rolling boil. Add sago pearls and cook for 12-15 minutes, stirring occasionally, until translucent with a small white dot in the center.

  2. Rinse & Drain: Immediately drain and rinse under cold water to remove excess starch and stop the cooking process.

  3. Make Coconut Sauce: In a separate saucepan, combine coconut milk, water, sugar, and salt. Heat gently until sugar dissolves. Do not boil.

  4. Combine: Mix the cooked sago pearls with the warm coconut sauce.

  5. Chill: Pour into individual serving bowls or one large dish. Refrigerate for at least 2 hours until set.

  6. Serve: Enjoy chilled with your favourite tropical fruit toppings.

Chef's Tip: The key to perfect sago is using plenty of boiling water and stirring occasionally to prevent sticking. Don't overcook – they should be soft but still pleasantly chewy. Recipe for Sago Pearls

Mango Sago (Hong Kong-Style Dessert)

(Serves 4)

Ingredients:

  • ½ cup sago pearls

  • 4 cups water (for boiling)

  • 2 ripe mangoes, diced (or 1½ cups mango puree)

  • 1 cup coconut milk (or evaporated milk)

  • ¼ cup condensed milk (adjust to taste)

  • 1 tbsp sugar (optional)

  • Fresh mint or pomelo (for garnish)


Instructions:

1. Cook the Sago Pearls

  • Boil 4 cups water in a pot.

  • Add sago pearls, stir, and simmer for 15 mins (stir occasionally).

  • Turn off heat, cover, and let sit 10 mins (pearls should turn translucent).

  • Rinse under cold water to remove starch. Drain.

2. Prepare Mango Mixture

  • Blend 1 mango + coconut milk + condensed milk until smooth.

  • Adjust sweetness with sugar if needed.

3. Assemble

  • Mix cooked sago with the mango-coconut mixture.

  • Add diced mango (reserve some for topping).

  • Chill 1 hour (or serve over ice).

4. Garnish & Serve

  • Top with extra mango, a drizzle of coconut milk, and mint leaves.
