Sorghum Flour Chocolate Chip Cookies
*(Makes 24 cookies | 15 mins prep + 10 mins baking)*
Ingredients:

1 ¼ cups (150g) sorghum flour

½ tsp baking soda

¼ tsp salt
-
½ cup (115g) softened butter (or coconut oil for dairy-free)

½ cup (100g) brown sugar

¼ cup (50g) white sugar

1 large egg (or flax egg for vegan)

1 tsp vanilla extract
-
1 cup (180g) chocolate chips

½ cup chopped walnuts or pecans (optional)

1 tbsp molasses (for deeper flavor)

Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Whisk dry ingredients: In a bowl, mix sorghum flour, baking soda, and salt.

Cream butter & sugars: Beat butter with brown and white sugar until fluffy (2-3 mins).

Add wet ingredients: Mix in egg and vanilla until combined.
