Recipe for Fennel seeds

🍝 Classic Fennel Seed Italian Sausage 🍝

Makes 6 sausages (or 1 lb bulk sausage)

Why It’s #1:
✅ Authentic flavor – The #1 spice in traditional Italian sausage
✅ Textural magic – Whole seeds provide bursts of flavor when bitten
✅ Versatile – Works in pasta, pizza, sandwiches, or grilled solo

Ingredients:

  • 1 lb (450g) ground pork (20-30% fat for juiciness)

  • 1½ tbsp fennel seeds (key ingredient)

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp paprika

  • ½ tsp red pepper flakes (optional for heat)

  • 2 tbsp cold water or white wine (for binding)

Instructions:

  1. Toast fennel seeds in a dry pan 1-2 mins until fragrant (enhances flavor).

  2. Combine all ingredients in a bowl, mix vigorously for 2 mins (develops stickiness for casing).

  3. Chill 1+ hours (or overnight) for flavors to meld.

  4. Cook as desired:

    • Grill/pan-fry: 4-5 mins per side

    • Bake: 375°F (190°C) for 20-25 mins

    • Casing option: Stuff into hog casings before cooking

Serving Ideas:
• With peppers/onions on a hero roll
• Crumbled in pasta sauces or risotto
• Breakfast patties with maple syrup drizzle

Other Top Fennel Seed Recipes:

  1. Indian Tadka (Tempering) – Fried in ghee for dal/curries

  2. Chinese Five-Spice Powder – Toasted & ground with star anise

  3. Scandinavian Rye Bread – Kneaded into dough for earthy notes

  4. Middle Eastern Za’atar – Mixed with thyme and sumac

Pro Tip: For extra depth, soak seeds in warm water 10 mins before using—softens them slightly while preserving crunch.
