Ingredients:

4 cups SpicenEasy Coconut Thread

3 cups icing sugar, sifted

1 tin (395g) sweetened condensed milk

2-3 drops pink food colouring
Instructions:

Prepare Tin: Line a 20cm x 20cm (8-inch) square baking tin with baking paper.

Mix Base: In a large bowl, combine the SpicenEasy Coconut Thread and sifted icing sugar. Add the condensed milk and mix vigorously until a thick, uniform paste forms.

Divide Mixture: Split the mixture evenly between two bowls.

Colour: Add pink food colouring to one portion and mix until evenly coloured.

Layer: Press the white mixture firmly and evenly into the prepared tin. Then, carefully press the pink mixture on top.

Set: Refrigerate for at least 4 hours, or until firm.

Slice & Serve: Turn out onto a cutting board and slice into small squares. Store in an airtight container in the refrigerator.
Chef's Tip: For the best texture, make sure to mix the condensed milk in thoroughly – the mixture should be quite stiff. For a professional finish, use a second piece of baking paper to press the layers down smoothly and evenly. You can also add 1 tsp of vanilla essence to the white layer for extra flavour.
