Prep Time: 10 mins
Cook Time: 20 mins
Servings: 4
Ingredients
-
4 boneless, skinless chicken breasts (or thighs)
-
2 tbsp Tuscan Seasoning (SpicenEasy)
-
2 tbsp olive oil
-
3 garlic cloves, minced
-
1 cup heavy cream (or half-and-half for lighter version)
-
½ cup chicken broth
-
1 cup grated Parmesan cheese
-
1 cup baby spinach, packed
-
½ cup sun-dried tomatoes (oil-packed, drained & chopped)
-
Salt & black pepper to taste
For garnish: Fresh basil or parsley
Instructions
-
Season & Sear Chicken:
-
Pat chicken dry, then coat evenly with Tuscan Seasoning, salt, and pepper.
-
Heat olive oil in a large skillet over medium-high heat. Sear chicken 5–6 mins per side until golden. Remove and set aside.
-
-
Make the Sauce:
-
In the same skillet, sauté garlic for 30 seconds until fragrant.
-
Pour in chicken broth to deglaze, scraping up browned bits.
-
Reduce heat to medium, then add heavy cream and Parmesan. Stir until cheese melts (2–3 mins).
-
-
Finish & Serve:
-
Add spinach and sun-dried tomatoes, stirring until spinach wilts (1–2 mins).
-
Return chicken to the skillet, spooning sauce over it. Simmer 2–3 mins to thicken.
-
Garnish with fresh basil and extra Parmesan.
