  • 2 tbsp tapioca flour or cornflour

  • 2 tbsp lemon juice

  • 1 tbsp SpicenEasy Olive Oil

  • 1 tsp SpicenEasy Smoked Paprika

  • ½ tsp salt

  • ¼ tsp turmeric (for colour, optional)

*Quick-soak cashews: *Cover with boiling water and soak for 15-20 minutes, then drain.*

Instructions:

  1. Blend: Combine all ingredients in a high-speed blender. Blend until completely smooth and creamy.

  2. Cook: Pour the mixture into a saucepan. Heat over medium heat, whisking constantly.

  3. Thicken: Continue to cook and whisk for 3-5 minutes until the sauce thickens dramatically and becomes stretchy and glossy.

  4. Season: Taste and adjust seasoning if needed. For a thinner sauce, add a splash more water.

  5. Serve Immediately: Toss with cooked pasta for vegan mac and cheese, pour over nachos, or use as a dipping sauce.
