South African Braai Chicken
Serves: 4-6
Prep Time: 10 mins (+ 2+ hours marination)
Cook Time: 25-30 mins
Ingredients:
For the Chicken & Marinade:

1.5 kg (3 lbs) chicken pieces (thighs, drumsticks, or whole spatchcocked)

3 tbsp braai rub (SpicenEasy)

2 tbsp olive oil
-
2 tbsp lemon juice or vinegar
-
2 tbsp Worcestershire sauce
-
2 garlic cloves, minced
-
1 tsp smoked paprika (optional, for extra smokiness)

Salt to taste (if rub isn’t salty)
For Basting (Optional):

¼ cup melted butter or olive oil
-
1 tbsp braai rub
To Serve:

Lemon wedges
-
Fresh parsley or cilantro
Instructions:
1. Marinate the Chicken:

In a bowl, mix braai rub, olive oil, lemon juice, Worcestershire sauce, garlic, and paprika.

Coat chicken evenly (under the skin if possible). Cover and refrigerate for 2+ hours (overnight for best flavor).
2. Braai (Grill) the Chicken:

Prep the fire: Use charcoal or wood (hardwood like rooikrans or mopani for authentic flavor). Heat until coals are white-hot.

Grill: Place chicken skin-side down first. Cook 15 mins per side, turning occasionally, until internal temp hits 75°C/165°F.

Baste: Brush with butter + braai rub mix in the last 5 mins for extra crispiness.
3. Serve:

Rest chicken for 5 mins. Garnish with lemon and herbs.

Pair with pap (maize porridge), braaibroodjie (grilled cheese sandwich), or chakalaka (spicy relish).
