Yields: 6 servings
Prep time: 10 minutes (plus overnight soaking)
Cook time: 1.5 - 2 hours

Ingredients:

  • 2 cups SpiceEasy Bulk Pinto Beans, rinsed

  • 1 medium onion, quartered

  • 3 cloves garlic, smashed

  • 1 bay leaf

  • 1 teaspoon SpiceEasy Sea Salt (or to taste)

  • ½ teaspoon SpiceEasy Black Peppercorns, cracked

  • 8 cups water

Instructions:

  1. Soak the Beans: Place the rinsed pinto beans in a large pot and cover with 2-3 inches of cold water. Let soak for at least 8 hours or overnight. Drain and rinse before cooking.

  2. Sauté Aromatics: In the same large pot, heat a tablespoon of oil over medium heat. Add the onion and garlic, cooking for 2-3 minutes until fragrant.

  3. Cook the Beans: Add the drained beans, bay leaf, and 8 cups of fresh water to the pot. Bring to a boil, then reduce the heat to a low simmer.

  4. Simmer to Creaminess: Partially cover the pot and let the beans simmer gently for 1.5 to 2 hours, stirring occasionally. Avoid boiling vigorously, as this can cause the skins to split.

  5. Season: Once the beans are tender and creamy, stir in the sea salt and cracked black pepper. Simmer for another 5 minutes to allow the flavors to meld.

  6. Serve: Remove the bay leaf, onion quarters, and garlic cloves. Serve the beans warm in their flavorful broth.

Chef's Tip: For an extra layer of flavor, add a sprig of epazote or a pinch of SpiceEasy Smoked Paprika during the last 30 minutes of cooking.

Serving Suggestions:

  • As a Side: Serve alongside rice or with warm tortillas.

  • For Breakfast: Top with a fried egg and a dash of hot sauce.

  • Make them Refried: Drain the cooked beans, reserving the liquid. Mash them in a hot skillet with a little oil or lard, adding the reserved liquid until you reach your desired consistency.
