Recipe for Mung Beans
Korean Mung Bean Stew (Nokdu Jjigae) (Serves 4)
A comforting, gluten-free stew packed with plant-based protein!
🥣 Ingredients:

1 cup whole mung beans (soaked 4-6 hours or overnight)

4 cups vegetable or anchovy broth (or water)

1 zucchini, diced
-
1 small onion, sliced

2 cloves garlic, minced
-
1 tbsp doenjang (Korean fermented soybean paste)

1 tsp gochujang (Korean red pepper paste, adjust for spice)

1 tsp soy sauce
-
1 tsp sesame oil
-
2 green onions, chopped
-
1 tsp sesame seeds (for garnish)

Salt & pepper to taste
🔥 Instructions:

Drain & rinse soaked mung beans.

Boil beans in broth for 30-40 mins until tender (skim foam if needed).
