1 cup SpicenEasy Millet Flour

½ cup tapioca flour or arrowroot flour

1 tsp baking powder

½ tsp salt

¾ cup warm water

2 tbsp olive oil or ghee, plus extra for cooking

Instructions:

Mix Dry Ingredients: In a medium bowl, whisk together the millet flour, tapioca flour, baking powder, and salt.

Form Dough: Make a well in the center and add the warm water and olive oil. Mix until a soft, slightly sticky dough forms. If using, add cumin seeds or herbs now.

Rest Dough: Cover the bowl and let the dough rest for 10 minutes. This allows the flours to hydrate fully.

Shape Flatbreads: Divide the dough into 6-8 equal pieces. Roll each piece into a ball, then press or roll out between two sheets of baking paper to form thin circles (about 15cm diameter).

⅓ cup (80ml) maple syrup or honey

¼ cup (60ml) melted coconut oil or butter

1 tsp vanilla extract

½ cup chopped walnuts or chocolate chips (optional)

Instructions:
