Recipe For Za'atar
Za'atar Manakish (Middle Eastern Flatbread)
*(Makes 4-6 flatbreads)*
Ingredients:
For the Dough:

2 cups (250g) all-purpose flour (or bread flour)

1 tsp instant yeast
-
1 tsp sugar
-
½ tsp salt
-
¾ cup warm water
-
2 tbsp olive oil
For the Topping:

¼ cup za'atar spice blend
-
¼ cup extra-virgin olive oil
-
1-2 tbsp water (to adjust consistency)
-
Optional: sprinkle of sesame seeds
Instructions:

Make the dough:

Mix flour, yeast, sugar, and salt in a bowl.

Add warm water and olive oil, knead for 5-7 mins until smooth.

Cover and let rise for 1 hour (or until doubled).

Prep the topping:

Mix za'atar and olive oil into a spreadable paste (add water if too thick).

Assemble:

Divide dough into 4-6 balls, roll each into a thin circle (~¼ inch thick).

Spread za'atar paste evenly over each round.

Bake:

Heat oven to 475°F (245°C).

Bake on a pizza stone or sheet pan for 8-10 mins until edges are golden.

Serve warm with labneh (strained yogurt), olives, or fresh veggies.
