Recipe for Sunflower seeds

Sunflower Seed Butter (Like SunButter®)

(Creamy, rich, and perfect for sandwiches or dipping!)

Ingredients:

  • 2 cups raw sunflower seeds (shelled)

  • 1–2 tbsp honey or maple syrup (optional, for sweetness)

  • 1–2 tbsp neutral oil (like sunflower or coconut oil, if needed for creaminess)

  • ½ tsp salt (adjust to taste)

  • ½ tsp vanilla extract (optional)

  • ¼ tsp cinnamon (optional)

Instructions:

  1. Toast the seeds (optional but enhances flavor):

    • Spread seeds on a baking sheet and roast at 350°F (175°C) for 8–10 mins, stirring occasionally, until lightly golden.

    • Let cool slightly (but blending while warm helps with creaminess).

  2. Blend into butter:

    • Add seeds to a food processor (a high-speed blender works too).

    • Blend for 5–10 mins, scraping sides often, until smooth and oily.

    • Add oil if needed for creaminess, plus sweetener, salt, and vanilla.

  3. Store & enjoy:

    • Transfer to a jar and keep refrigerated for up to 2 weeks.

    • Use on toast, in smoothies, or as a dip for apples/celery.


2. Superfood Sunflower Seed Bars (No-Bake)

(Like granola bars, but with sunflower seeds as the star!)

Ingredients:

  • 1 cup sunflower seeds

  • 1 cup rolled oats

  • ½ cup peanut butter (or sunflower seed butter)

  • ⅓ cup honey or maple syrup

  • ¼ cup dried cranberries or chocolate chips

  • 1 tsp vanilla extract

  • ½ tsp cinnamon

  • Pinch of salt

Instructions:

  1. Mix all ingredients in a bowl until sticky.

  2. Press firmly into a lined baking dish.

  3. Chill for 1–2 hours, then slice into bars.


3. Crunchy Sunflower Seed Pesto (Nut-Free)

(A twist on classic pesto—great for pasta or salads!)

Ingredients:

  • ½ cup sunflower seeds (toasted)

  • 2 cups fresh basil

  • 2 cloves garlic

  • ¼ cup parmesan cheese (or nutritional yeast for vegan)

  • ½ cup olive oil

  • 1 tbsp lemon juice

  • Salt & pepper to taste

Instructions:

  1. Blend all ingredients until smooth.

  2. Toss with pasta, spread on sandwiches, or use as a dip!
