Recipe for Chilli Corn Carne

Classic Beef Chili Con Carne

A hearty, smoky chili with tender beef, beans, and bold spices – perfect for cozy nights or game day feasts!

Serves: 6-8


Ingredients

Main Components:

  • 1 tbsp olive oil

  • 1 large onion, diced

  • red bell pepper, diced

  • garlic cloves, minced

  • 500g (1 lb) ground beef (or cubed chuck steak for extra tenderness)

  • 2 tbsp chili con carne seasoning (SpicenEasy)

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • 1 can (400g) crushed tomatoes

  • 1 can (400g) kidney beans, drained (or black/pinto beans)

  • 1 cup beef stock

  • 1 tbsp tomato paste

  • 1 tsp brown sugar (or honey)

  • Salt & black pepper to taste

Toppings (Pick Your Favorites):

  • Shredded cheddar cheese

  • Sour cream or Greek yogurt

  • Fresh cilantro/coriander

  • Sliced jalapeños

  • Lime wedges

  • Cornbread or tortilla chips

Homemade Chili Seasoning (if needed):

*Mix: 2 tbsp chili powder + 1 tsp each: cumin, garlic powder, onion powder, oregano + ½ tsp cayenne.*


Instructions

1. Sauté the Veggies

  1. Heat oil in a Dutch oven or heavy pot over medium heat.

  2. Add onion and bell pepper. Cook for 5 mins until soft.

  3. Stir in garlic and cook for 1 minute until fragrant.

2. Brown the Beef

  1. Add ground beef, breaking it up with a spoon. Cook until no pink remains (~5-7 mins).

  2. Sprinkle chili seasoning, cumin, and smoked paprika. Stir to coat the meat.

3. Simmer to Perfection

  1. Pour in crushed tomatoes, beans, beef stock, tomato paste, and sugar. Stir well.

  2. Bring to a boil, then reduce heat to low. Cover and simmer for 1-1.5 hours (stir occasionally).

    • For cubed beef: Simmer 2+ hours until fork-tender.

  3. Season to taste with salt/pepper. For thicker chili, uncover and simmer longer.

4. Serve & Garnish

  • Ladle into bowls and top with cheese, sour cream, cilantro, and jalapeños.

  • Serve with cornbread, rice, or tortilla chips.


Variations to Try

  • Turkey Chili: Swap beef for ground turkey + chicken stock.

  • Vegetarian Chili: Use lentils/mushrooms + veggie stock.

  • Texas-Style (No Beans): Skip beans and double the beef.
