Recipe for Linseed/ Flaxseed Ground
Flaxseed Banana Bread
Makes: 1 loaf (8-10 slices)

Ingredients:

1 ¾ cups (220g) whole wheat flour (or gluten-free blend)

¼ cup (30g) ground flaxseed (golden or brown)

1 tsp baking soda

½ tsp salt

1 tsp cinnamon

3 ripe bananas, mashed (about 1 ½ cups)

⅓ cup (80ml) maple syrup or honey

2 eggs (or flax eggs: 2 tbsp ground flax + 6 tbsp water)

⅓ cup (80ml) melted coconut oil or butter

1 tsp vanilla extract

Optional add-ins:

½ cup walnuts or chocolate chips

1 tbsp chia seeds

Instructions:

Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.

Mix dry ingredients: Whisk flour, ground flaxseed, baking soda, salt, and cinnamon.
