Recipe for chicken Masala

Easy Chicken Masala (Using Chicken Masala Powder)

Serves: 4
Prep Time: 15 mins (+ 30 mins marination)
Cook Time: 30 mins

Ingredients:

For Marination:
  • 500g (1 lb) chicken (with bone or boneless)

  • 1 tbsp ginger-garlic paste

  • 1 tbsp lemon juice

  • ½ tsp turmeric

  • 1 tsp red chili powder

  • 1 tbsp chicken masala powder (SpicenEasy)

  • Salt to taste

For the Curry:
  • 3 tbsp oil or ghee

  • 2 onions, finely chopped

  • 2 tomatoes, pureed

  • 1 tbsp ginger-garlic paste

  • 1 green chili (slit, optional)

  • 1 tsp cumin seeds

  • 1 tbsp chicken masala powder

  • ½ tsp turmeric

  • ½ tsp garam masala

  • ½ cup yogurt (optional, for creaminess)

  • ½ cup water

  • Fresh coriander (for garnish)


Instructions:

1. Marinate the Chicken:

  1. Mix chicken with ginger-garlic paste, lemon juice, turmeric, chili powder, chicken masala powder, and salt.

  2. Let it marinate for 30 mins (or up to 2 hrs for deeper flavor).

2. Cook the Curry:

  1. Heat oil/ghee in a pan. Add cumin seeds and let them splutter.

  2. Add onions and sauté until golden brown. Add ginger-garlic paste and green chili, fry for 1 min.

  3. Add tomato puree and cook until oil separates (~5-7 mins).

  4. Add 1 tbsp chicken masala powder, turmeric, and salt. Mix well.

  5. Add marinated chicken and sear for 5 mins on medium heat.

  6. Lower heat, add yogurt (if using) and water. Cover and simmer for 15-20 mins until chicken is tender.

  7. Sprinkle garam masala and fresh coriander.

3. Serve Hot:

  • Best with roti, naan, or steamed rice.


Variations:

  • Creamy Version: Add 2 tbsp cream or cashew paste.

  • Restaurant-Style: Charcoal-smoke (dhungar) for smokiness.

  • Dry Masala: Reduce gravy and cook until semi-dry.
