Recipe for chicken Masala
Easy Chicken Masala (Using Chicken Masala Powder)

Ingredients:
For Marination:

500g (1 lb) chicken (with bone or boneless)
-
1 tbsp ginger-garlic paste
-
1 tbsp lemon juice
-
½ tsp turmeric
-
1 tsp red chili powder
-
1 tbsp chicken masala powder (SpicenEasy)
-
Salt to taste
For the Curry:
-
3 tbsp oil or ghee
-
2 onions, finely chopped
-
2 tomatoes, pureed
-
1 tbsp ginger-garlic paste
-
1 green chili (slit, optional)
-
1 tsp cumin seeds
-
1 tbsp chicken masala powder
-
½ tsp turmeric
-
½ tsp garam masala
-
½ cup yogurt (optional, for creaminess)
-
½ cup water
-
Fresh coriander (for garnish)
Instructions:
1. Marinate the Chicken:
-
Mix chicken with ginger-garlic paste, lemon juice, turmeric, chili powder, chicken masala powder, and salt.

Let it marinate for 30 mins (or up to 2 hrs for deeper flavor).
2. Cook the Curry:
-
Heat oil/ghee in a pan. Add cumin seeds and let them splutter.

Add onions and sauté until golden brown. Add ginger-garlic paste and green chili, fry for 1 min.

Add tomato puree and cook until oil separates (~5-7 mins).
-
Add 1 tbsp chicken masala powder, turmeric, and salt. Mix well.

Add marinated chicken and sear for 5 mins on medium heat.

Lower heat, add yogurt (if using) and water. Cover and simmer for 15-20 mins until chicken is tender.

Sprinkle garam masala and fresh coriander.
3. Serve Hot:

Best with roti, naan, or steamed rice.
Variations:

Creamy Version: Add 2 tbsp cream or cashew paste.

Restaurant-Style: Charcoal-smoke (dhungar) for smokiness.

Dry Masala: Reduce gravy and cook until semi-dry.
