Recipe for Caribbean Jerk Seasoning

Jamaican Jerk Chicken

Serves: 4-6
Prep Time: 15 mins (+ 4+ hours marination, ideally overnight)
Cook Time: 30-40 mins

Ingredients:

For the Jerk Marinade:
  • 1.5 kg (3 lbs) chicken (thighs, legs, or wings work best)

  • 3 tbsp Caribbean jerk seasoning (SpicenEasy)

  • 2-3 Red Peppers/Green chillies* (adjust for heat, seeds removed for milder spice)

  • 4 garlic cloves

  • 1 small onion, chopped

  • 3 green onions, chopped

  • 1 tbsp fresh thyme (or 1 tsp dried)

  • 1 tbsp ground allspice (key for authentic jerk flavor)

  • 1 tbsp brown sugar

  • 1 tbsp soy sauce

  • 1 tbsp olive oil or vegetable oil

  • 1 tbsp lime or lemon juice

  • 1 tsp cinnamon

  • 1 tsp nutmeg

  • ½ tsp black pepper

For Cooking:
  • 2 tbsp oil (for grilling)

  • Pimento wood or chips** (for authentic smoke, optional)


Instructions:

1. Make the Jerk Marinade:

  1. In a blender or food processor, combine jerk seasoning, Red Peppers, garlic, onions, thyme, allspice, brown sugar, soy sauce, oil, lime juice, and spices. Blend into a coarse paste.

  2. Pro Tip: For extra depth, toast whole allspice berries and grind them fresh.

2. Marinate the Chicken:

  1. Score the chicken pieces deeply to allow marinade to penetrate.

  2. Coat chicken thoroughly with jerk paste 

  3. Refrigerate at least 4 hours, ideally overnight for maximum flavor.

3. Cook the Chicken:

Grill Method (Authentic):

  1. Heat grill to medium-high. Add soaked pimento wood chips for smoke (or use charcoal with allspice berries for aroma).

  2. Grill chicken skin-side down first, turning every 5-6 minutes, until charred and cooked through (internal temp 75°C/165°F), ~30-40 mins.

Oven Method:

  1. Bake at 190°C/375°F for 30 mins, then broil 5 mins for char.

4. Serve:

  • Garnish with lime wedges and fresh thyme.

  • Pair with rice and peas, fried plantains, or festival (sweet fried dumplings).
