Recipe For Baharat

Baharat-Spiced Kofta Kebabs

*(Serves 4-6)*

Ingredients:

For the Kofta:

  • 1 lb (450g) ground lamb (or beef/lamb mix)

  • 1 small onion, finely grated

  • garlic cloves, minced

  • 2 tbsp Baharat spice blend

  • 1 tsp ground cumin

  • 1 tsp salt

  • ½ tsp black pepper

  • ¼ cup fresh parsley, chopped

  • 2 tbsp pine nuts or walnuts (optional, for texture)

  • Skewers (metal or soaked wooden)

For Serving:

  • Warm pita bread or flatbreads

  • Tahini sauce or garlic yogurt

  • Grilled tomatoes/onions

  • Pickles and fresh herbs (mint, parsley)

Instructions:

  1. Mix the kofta:

    • In a bowl, combine meat, onion, garlic, Baharat, cumin, salt, pepper, parsley, and nuts. Knead for 2-3 minutes until sticky.

    • Cover and refrigerate for 30 mins (for flavors to meld).

  2. Shape the kebabs:

    • Mold meat onto skewers into sausage-like shapes (~1 inch thick).

  3. Cook:

    • Grill: Over medium-high heat for 8-10 mins, turning occasionally.

    • Broil or pan-fry: 4-5 mins per side until browned.

  4. Serve with pita, sauces, and sides.
