Baharat-Spiced Kofta Kebabs
*(Serves 4-6)*
Ingredients:
For the Kofta:

1 lb (450g) ground lamb (or beef/lamb mix)

1 small onion, finely grated
-
3 garlic cloves, minced
-
2 tbsp Baharat spice blend
-
1 tsp ground cumin
-
1 tsp salt
-
½ tsp black pepper
-
¼ cup fresh parsley, chopped
-
2 tbsp pine nuts or walnuts (optional, for texture)

Skewers (metal or soaked wooden)
For Serving:

Warm pita bread or flatbreads
-
Tahini sauce or garlic yogurt
-
Grilled tomatoes/onions
-
Pickles and fresh herbs (mint, parsley)
Instructions:

Mix the kofta:

In a bowl, combine meat, onion, garlic, Baharat, cumin, salt, pepper, parsley, and nuts. Knead for 2-3 minutes until sticky.

Cover and refrigerate for 30 mins (for flavors to meld).

Shape the kebabs:

Mold meat onto skewers into sausage-like shapes (~1 inch thick).

Cook:

Grill: Over medium-high heat for 8-10 mins, turning occasionally.

Broil or pan-fry: 4-5 mins per side until browned.
