Aloo Jeera (Cumin Potatoes with Hing)

Ingredients:

3 medium potatoes, boiled & cubed (peeled optional)

2 tbsp ghee or oil (ghee enhances hing’s aroma)

1 tsp cumin seeds
-
¼ tsp hing (asafoetida) (key ingredient!)

1 green chili, slit (adjust to taste)

1 tsp grated ginger
-
½ tsp turmeric powder
-
1 tsp coriander powder
-
1 tsp amchur (dry mango powder) or lemon juice

Salt to taste

Fresh cilantro, chopped (for garnish)
Instructions:

Heat ghee/oil in a pan over medium. Add cumin seeds; sizzle 10 seconds.

Add hing—let it bloom for 5 seconds (it’ll smell pungent at first, then mellow into an oniony-garlic aroma).

Toss in ginger, green chili, turmeric, and coriander powder. Stir 15 seconds.

Add potatoes, salt, and amchur/lemon juice. Cook 5–7 mins, crushing slightly for crisp edges.

Garnish with cilantro. Serve with roti, yogurt, or as a samosa filling!
