Nigella Seeds 80g

The Tiny Black Seed That Brings Peppery, Onion-Like Flavour and Crunch

You've probably seen Nigella Seeds scattered over naan and flatbreads.

But they're useful for far more than decoration.

SpicenEasy Nigella Seeds 80g have a distinctive flavour that combines peppery warmth, earthy herbal notes and a subtle onion-like character, along with a gentle bitter edge.

Also commonly known as Kalonji or sometimes called black onion seed, they are used throughout Indian, Bengali, Middle Eastern and North African cooking.

Sprinkle them over bread, toast them into vegetable dishes, add them to pickles and chutneys or use them in a spice tempering for curries and dal.

Their small size gives you flavour, crunch and visual contrast all at once.

Nigells/ Black Cumin Recipe

Naan Bread with Nigella Seed Topping

The buttery, aromatic flatbread that put kalonji on the global food map

 Authentic Recipe

Ingredients:

  • 3 cups (360g) all-purpose flour

  • 1 tbsp nigella seeds (plus extra for topping)

  • 1/2 cup yogurt

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 2 tbsp ghee (or butter)

  • 1 tsp sugar

  • 1/4 cup warm milk

Key Steps:

  1. Activate seeds: Dry-toast 1 tbsp nigella seeds 30 sec → grind half (releases nutty aroma)

  2. Knead dough: Mix flour, ground seeds, yogurt, and wet ingredients

  3. Rest: 2 hours (develops tangy flavor)

  4. Cook: Stretch into ovals → brush with ghee → press whole nigella seeds on top → skillet-cook until charred

Serving Ritual:
Pair with daal tadka or butter chicken

 Why Nigella Seeds Shine:

  1. Texture: Crunchy pop contrasts soft naan

  2. Health halo: Ancient remedy for digestion (Ayurveda/Unani medicine)

  3. Flavor bridge: Complements both savory (curries) and sweet (Persian pastries)

Pro Tip:

  • For extra fragrance, infuse seeds in warm ghee before brushing

  • No yeast? Baking powder + yogurt creates perfect rise

 Other Top Nigella Seed Recipes:

  1. Bengali Panch Phoron (5-spice blend with kalonji)

  2. Turkish Simit (sesame-nigella crusted bread rings)

  3. Middle Eastern Za’atar (some versions include nigella)

Science Bit:
Nigella’s thymoquinone compound:
→ Antioxidant properties studied in 1,200+ papers
→ Heat-stable (unlike many spices)

Why Keep Nigella Seeds in the Pantry?

A flavour unlike most other spices
Peppery, earthy, slightly herbal and gently onion-like.

Perfect for breads
Nigella is one of the classic toppings for naan and other flatbreads.

Adds texture as well as flavour
The tiny black seeds provide a delicate crunch.

Excellent for pickles and chutneys
They work particularly well in Indian and Bengali-style preserving.

Use whole or lightly crushed
Keep them intact for texture or crush them when you want the flavour to spread further through the dish.

What Do Nigella Seeds Taste Like?

Nigella Seeds have a complex flavour that can remind you of several familiar ingredients at once.

You may notice:

Black pepper-like warmth
A subtle onion-like savouriness
Earthy herbal notes
A faint bitterness

But Nigella doesn't taste exactly like any of those things.

It has a very distinctive character of its own.

That makes it particularly useful when you want a seasoning that gives both flavour and texture without chilli heat.

Nigella Seeds Are Not Onion Seeds

Nigella Seeds are sometimes called black onion seeds because of their appearance and onion-like flavour.

But they do not come from onions.

They come from a completely different plant.

This is worth knowing because the seed behaves much more like a spice than a dried onion product.

Think of it as its own seasoning rather than a substitute for chopped onion.

How to Use Nigella Seeds

Naan

Brush naan dough with water, milk or ghee.

Sprinkle Nigella Seeds over the surface.

Press them lightly into the dough so they stay attached during cooking.

The seeds toast as the bread cooks and release more of their aroma.

Roti & Flatbreads

Mix them directly into dough or sprinkle them over the top before cooking.

Focaccia

Nigella also works beautifully outside Indian cooking.

Sprinkle it over focaccia alongside olive oil and sea salt.

Curries

Add Nigella Seeds to hot oil at the beginning of a vegetable or lentil dish.

Allow them to sizzle briefly before adding the other ingredients.

Pickles

Use whole seeds in:

Indian pickles
Chutneys
Brines

alongside mustard, fenugreek, coriander or chilli.

Roast Vegetables

Sprinkle over cauliflower, potatoes, carrots or pumpkin before roasting.

Toast Them for More Aroma

Nigella Seeds can be used straight from the pack.

But gentle toasting makes their flavour more pronounced.

Place the seeds in a dry frying pan over moderate heat.

Toast for around 1–2 minutes, stirring regularly.

Remove them as soon as they become more fragrant.

Allow them to cool before using.

Don't let them burn.

The slight bitterness can become unpleasant if they're overcooked.

Use Nigella in Tadka

Nigella can also be used in tadka, the Indian technique of frying spices briefly in hot oil.

Heat oil.

Add Nigella Seeds.

Allow them to sizzle.

Then continue with ingredients such as:

Chilli
Garlic
Onion
Other whole spices

before adding vegetables or lentils.

The hot oil carries the Nigella flavour through the finished dish.

Nigella Seeds vs Black Cumin

Nigella is sometimes informally called black cumin, which can be confusing.

It is not the same as ordinary cumin seed.

Nigella has a more:

Peppery
Herbal
Onion-like

character.

Cumin is:

Earthier
Warmer
More smoky

They can appear in some of the same cuisines, but they bring very different flavours.

Try It This Way

For easy Nigella roast potatoes:

Cut potatoes into chunks.

Toss with:

Olive oil
Nigella Seeds
Garlic
Salt
Black Pepper

Roast until crisp.

Finish with lemon.

The Nigella gives the potatoes little bursts of peppery flavour and a visible black-speckled finish.

Make Nigella Naan

Prepare your usual naan dough.

Before cooking:

Brush the surface lightly with water or ghee.

Sprinkle generously with Nigella Seeds.

Press them gently into the dough.

Cook until puffed and browned.

Brush with butter or ghee before serving.

Serve with:

Dal
Butter Chicken
Curries
Dips

It's one of the simplest ways to appreciate Nigella in its most familiar form.

Use Them in a Seed Topping

Combine Nigella Seeds with:

Sesame Seeds
Poppy Seeds
Sunflower Seeds

and use over:

Bread rolls
Focaccia
Savoury muffins
Crackers

Nigella's black colour gives the mixture strong visual contrast as well as flavour.

Use Them on Salads

Lightly toasted Nigella Seeds can add crunch to:

Green salads
Potato salad
Tomato salad
Cucumber salad

Sprinkle them over immediately before serving.

They work particularly well when the salad also includes:

Yoghurt
Lemon
Feta
Olive oil

Beyond Naan

Once you've opened the pack, try Nigella Seeds in:

• Roti
• Paratha
• Focaccia
• Bread rolls
• Savoury crackers
• Curries
• Dal
• Pickles
• Chutneys
• Roast potatoes
• Cauliflower
• Salads
• Cheese boards
• Seed toppings
• Homemade spice blends

Nigella Seeds become much more useful once you stop thinking of them as “the black seeds on naan” and start using them as a peppery, crunchy whole spice in their own right.

Use Whole or Lightly Crushed

Whole seeds give you more visible texture and crunch.

Lightly crushing them releases more aroma and spreads the flavour more evenly.

For bread toppings, keep them whole.

For spice blends or marinades, lightly crushing them can work particularly well.

Storage

Store Nigella Seeds in an airtight container in a cool, dark and dry place to help protect their aroma and flavour.
