Recipe for Tandoori Masala
🍗 Classic Tandoori Chicken 🍗
(Serves 4)
Ingredients:
For the Marinade:

1 cup plain yogurt (Greek yogurt works best)

2 tbsp tandoori masala (this is the star!)

1 tbsp ginger-garlic paste

1 tbsp lemon juice
-
1 tsp Kashmiri red chili powder (for color, optional)

½ tsp turmeric
-
1 tsp salt
-
1 tbsp oil (mustard or vegetable)

A few drops of red food coloring (optional, for the classic look)
Other Ingredients:

8 pieces of chicken (legs, thighs, or breast with skin on)

1 onion, sliced

Lemon wedges, for serving

Fresh cilantro, for garnish
Instructions:

Prepare the Chicken:

Make deep slashes (2-3 cuts) on each piece of chicken. This helps the marinade penetrate deeply.

Pat the chicken completely dry with paper towels.

Make the Marinade:

In a large bowl, mix all the marinade ingredients together until smooth and well combined.

Marinate:

Add the chicken to the bowl and coat every piece thoroughly with the marinade, making sure to get it into the slashes.

Cover the bowl and refrigerate for at least 4 hours, or ideally overnight. This is the key to flavorful and tender chicken!

Cook the Chicken:

Preheat your oven to 425°F (220°C).

Place a wire rack on a baking sheet (to allow air to circulate) and arrange the chicken pieces on it.

Bake for 20-25 minutes. Then, flip the pieces and bake for another 15-20 minutes, until the chicken is cooked through and has a slightly charred, "tandoori" appearance.

For Grilling: Grill over medium-hot coals for 15-20 minutes per side, until charred and cooked through.
