Recipe for Wild Rice
Wild Rice Pilaf with Cranberries & Pecans
(Serves 4 as a side)
Ingredients:

1 cup wild rice (or wild rice blend)

3 cups vegetable or chicken broth
-
1 tbsp olive oil or butter
-
1 small shallot, finely chopped
-
1 celery stalk, diced
-
½ cup dried cranberries
-
½ cup toasted pecans, chopped
-
1 tsp fresh thyme (or ½ tsp dried)
-
¼ tsp salt
-
¼ tsp black pepper
-
2 tbsp fresh parsley, chopped
Instructions:

Rinse rice – Place wild rice in a fine-mesh strainer and rinse under cold water.

Sauté aromatics – In a saucepan, heat oil over medium. Cook shallot and celery for 3 mins until soft.

Toast rice – Add rinsed rice and thyme, stir for 1 minute to lightly toast.

Simmer – Pour in broth, bring to a boil, then reduce heat to low. Cover and simmer for 45–50 mins (or until rice splits and is tender).

Fluff & mix – Remove from heat, let sit 5 mins. Stir in cranberries, pecans, salt, and pepper.

Garnish with fresh parsley.
Serving Ideas:
🍗 Pair with – Roasted turkey, duck, or stuffed acorn squash.
🥗 Make it a meal – Add roasted chickpeas or goat cheese for a vegetarian main.
