Ingredients (2 servings):

  • 1 block soft tofu (cut into cubes)

  • 2 tbsp Sichuan peppercorns (1 tbsp ground + 1 tbsp whole)

  • 100g ground pork (or mushrooms for vegan)

  • 2 tbsp doubanjiang (fermented chili bean paste)

  • 1 tbsp garlic (minced)

  • 1 tbsp ginger (minced)

  • Sauce: 1 cup broth + 1 tbsp soy sauce + 1 tsp sugar + 1 tsp cornstarch

Key Steps:

  1. Bloom peppercorns: Toast whole Sichuan peppercorns 1 min → grind half

  2. Stir-fry pork → add doubanjiang until oil turns red

  3. Add aromatics → pour sauce + tofu (simmer 5 mins)

  4. Finish with ground Sichuan pepper + chili oil
