Ingredients:
- 
2 cups SpicenEasy Buckwheat Puffs 
- 
1 cup rolled oats (gluten-free if required) 
- 
½ cup nut butter (peanut, almond, or sunflower seed butter) 
- 
⅓ cup honey or maple syrup 
- 
¼ cup seeds (pumpkin, sunflower, or chia) 
- 
¼ cup dried fruit (raisins, cranberries, or chopped dates) 
- 
2 tbsp coconut oil 
- 
1 tsp vanilla extract 
- 
Pinch of salt 
- 
Optional: 2 tbsp protein powder, ¼ cup dark chocolate chips 
Instructions:
- 
Line Pan: Line a 20cm x 20cm (8-inch) square baking tin with baking paper. 
- 
Mix Dry Ingredients: In a large bowl, combine buckwheat puffs, rolled oats, seeds, dried fruit, and any optional additions. 
- 
Heat Wet Ingredients: In a small saucepan over low heat, gently warm the nut butter, honey/maple syrup, and coconut oil until melted and easily stirred together. Remove from heat and stir in vanilla and salt.

Combine: Pour the warm wet mixture over the dry ingredients. Mix thoroughly until everything is evenly coated.

Press Firmly: Transfer the mixture to the prepared tin. Use the back of a spoon or a piece of baking paper to press down very firmly and evenly – this is key to the bars holding together.

Chill: Refrigerate for at least 1 hour, or until completely firm.

Slice and Store: Lift out of the tin using the paper and cut into bars or squares. Store in an airtight container in the fridge. 
Chef's Tip: Pressing the mixture down VERY firmly is the secret to bars that don't crumble. If your mixture seems too dry, add an extra tablespoon of nut butter or honey. For a chocolate version, drizzle melted dark chocolate over the top before chilling. These bars are perfect for customizing with your favourite nuts, seeds, and spices like cinnamon!
