Ingredients:

2 cups basmati rice

1/4 tsp saffron threads (soaked in 2 tbsp hot water)

1/2 cup plain yogurt (for crust)

3 tbsp butter/ghee

1 tbsp rosewater (optional)

Salt to taste
Key Steps:

Bloom saffron: Crush threads + steep in hot water (15 mins)

Parboil rice → mix yogurt + 1/3 rice + saffron water

Layer: Buttered pot → yogurt-rice → remaining rice

Steam 45 mins on low → flip for golden crust
