Silky Fine Polenta (5-Minute Method)
(Serves 4 as a side)
Ingredients:

1 cup fine cornmeal (instant polenta)

4 cups water, milk, or broth (or half water/half milk for richness)

1 tsp salt

2 tbsp butter or olive oil

¼ cup grated Parmesan (optional)

Black pepper or chili flakes to taste
Instructions:

Boil liquid – In a saucepan, heat water/milk with salt until simmering.

Whisk in cornmeal – Gradually sprinkle in fine polenta while whisking constantly to prevent lumps.

Cook – Reduce heat to low and stir for 3–5 minutes until thick and creamy (fine cornmeal cooks much faster than coarse!).

Finish – Remove from heat, stir in butter and Parmesan (if using). Season with pepper.
