Recipe for Pearl Barley
Creamy Mushroom & Pearl Barley Risotto (Serves 4)
Ingredients:

1 cup pearl barley, rinsed

4 cups vegetable or chicken stock (keep warm)

2 tbsp olive oil
-
1 onion, finely chopped
-
2 garlic cloves, minced
-
250g mushrooms (cremini or button), sliced
-
½ cup dry white wine (optional, substitute with extra stock)

½ cup grated Parmesan cheese
-
2 tbsp butter
-
2 tbsp fresh parsley, chopped

Salt & black pepper to taste
Instructions:

Sauté aromatics – Heat olive oil in a large pan. Cook onion until soft (~5 mins), then add garlic and mushrooms. Sauté until mushrooms brown (~7 mins).

Toast barley – Add pearl barley, stir for 1–2 mins to lightly toast.

Deglaze – Pour in wine (if using), simmer until mostly evaporated.

Simmer – Add 1 cup warm stock, stir frequently. Once absorbed, repeat in ½-cup increments until barley is tender (~25–30 mins total).

Finish – Stir in butter, Parmesan, parsley, salt, and pepper. Serve hot!
Variations:
✔ Barley Soup – Simmer with carrots, celery, and thyme in broth.
✔ Mediterranean Barley Salad – Toss cooled barley with cucumber, feta, olives, and lemon dressing.
✔ Breakfast Barley Porridge – Cook with milk, cinnamon, and honey.
