Millet Flour Banana Bread
*(Makes 1 loaf | 10 mins prep + 50 mins baking)*
Ingredients:

1 ½ cups (180g) millet flour

½ tsp baking soda

1 ½ tsp baking powder

½ tsp salt

1 tsp cinnamon (optional)

3 ripe bananas, mashed (~1 ½ cups)

2 eggs (or flax eggs for vegan)

⅓ cup (80ml) maple syrup or honey

¼ cup (60ml) melted coconut oil or butter

1 tsp vanilla extract
-
½ cup chopped walnuts or chocolate chips (optional)
Topping Ideas:

Instructions:

Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.

Mix dry ingredients: In a bowl, whisk millet flour, baking soda, baking powder, salt, and cinnamon.

Combine wet ingredients: In another bowl, mix mashed bananas, eggs, maple syrup, oil, and vanilla.

Fold together: Gently mix wet and dry ingredients until just combined. Avoid overmixing.

Add mix-ins: Stir in walnuts or chocolate chips if using.

Bake 50-55 mins until a toothpick comes out clean.

Cool for 10 mins before slicing.
