Flaxseed Oatmeal Breakfast Cookies

Ingredients:

1 cup rolled oats (gluten-free if needed)

½ cup ground flaxseed (linseed) (key for binding & nutrition!)

1 ripe banana, mashed (or ½ cup applesauce)

2 tbsp honey or maple syrup

2 tbsp nut butter (peanut, almond, or sunflower)

1 tsp cinnamon
-
½ tsp vanilla extract
-
Pinch of salt

Optional mix-ins:

¼ cup dark chocolate chips

2 tbsp chopped nuts

2 tbsp dried cranberries

Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Mix wet ingredients: In a bowl, combine mashed banana, honey, nut butter, and vanilla.

Add dry ingredients: Stir in oats, ground flaxseed, cinnamon, and salt until a thick dough forms. Fold in mix-ins.

Shape & bake: Scoop 1.5-tbsp portions onto the sheet; flatten slightly. Bake for 12–15 mins until edges are golden.

Cool for 10 mins (they firm up as they cool).
