🌶️ Cumin-Spiced Chickpea Curry (Chana Masala)
A fragrant, protein-packed dish where toasted cumin seeds shine.
Ingredients:

2 cups (400g) cooked chickpeas (or 1 can, drained)

1 tbsp whole cumin seeds (key for toasty aroma)

1 onion, finely chopped

2 tomatoes, pureed
-
3 garlic cloves, minced
-
1-inch ginger, grated
-
1 tsp turmeric
-
1 tsp coriander powder
-
1/2 tsp chili powder
-
1/2 tsp garam masala

Salt to taste

Fresh cilantro for garnish
Instructions:

Toast cumin seeds: Dry-roast in a pan for 30 sec until fragrant. Set aside half for garnish.

Sauté: In oil, fry remaining cumin + onion until golden. Add garlic, ginger, and spices.

Simmer: Add tomatoes, chickpeas, and 1 cup water. Cook 15 mins.

Finish: Stir in garam masala + reserved toasted cumin. Garnish with cilantro.
