Recipe for Cornflour
Crispy Sweet & Sour Chicken (Serves 4)
Perfect for: Fakeaway nights, party food, or meal prep
Ingredients:
For the Chicken:

500g chicken breast, cubed

½ cup cornflour (for coating)

¼ cup plain flour
-
1 egg, beaten
-
½ tsp salt
-
½ tsp garlic powder
-
Oil for frying
For the Sauce:
-
½ cup pineapple juice (or water)
-
¼ cup rice vinegar (or white vinegar)
-
¼ cup brown sugar
-
2 tbsp ketchup
-
1 tbsp soy sauce
-
1 tbsp cornflour (mixed with 2 tbsp water)

1 bell pepper, diced
-
1 onion, diced
-
½ cup pineapple chunks (fresh or canned)
Instructions:

Coat the chicken:

Toss chicken cubes in cornflour + flour + salt + garlic powder, then dip in beaten egg, and coat again in cornflour.

Fry until crispy:
-
Heat oil (1-inch deep) to 180°C (350°F). Fry chicken in batches for 3-4 mins until golden. Drain on a rack.

Make the sauce:

In a pan, simmer pineapple juice, vinegar, sugar, ketchup, and soy sauce for 2 mins.

Stir in cornflour slurry to thicken. Add veggies and pineapple; cook 2 mins.

Combine & serve:

Toss chicken in sauce or serve separately for extra crispiness.
