1 cup buttermilk (or 1 cup milk + 1 tbsp lemon juice)

⅓ cup vegetable oil or melted coconut oil

1 large egg

⅓ cup brown sugar or honey

1 tsp vanilla extract

1 cup wholemeal flour

1 tsp baking soda

1 tsp baking powder

½ tsp salt

½ cup raisins or chopped dates (optional)

1 tsp cinnamon (optional)
Instructions:

Soak Bran: Preheat oven to 200°C (180°C fan-forced). Line a 12-cup muffin tin with cases. In a large bowl, combine wheat bran flakes and buttermilk. Let stand for 10 minutes to soften.
