🥜 Kung Pao Chicken (Authentic Sichuan Style)

📜 Authentic Recipe

Ingredients (2 servings):

  • 1.5 lbs chicken breast (diced)

  • 1/2 cup blanched peanuts

  • 10 dried red chilies

  • 1 tbsp Sichuan peppercorns

  • 3 garlic cloves (minced)

  • 1 tbsp ginger (julienned)

  • Sauce: 2 tbsp soy sauce + 1 tbsp black vinegar + 1 tsp sugar + 1 tsp cornstarch

Key Steps:

  1. Velvet chicken: Marinate in 1 tbsp soy sauce + 1 egg white + 1 tsp cornstarch (15 mins)

  2. Stir-fry peanuts 1 min → set aside

  3. Bloom aromatics: Toast chilies + peppercorns 30 sec → add garlic/ginger

  4. Cook chicken → add sauce + peanuts → toss

Pro Tip:

  • For extra crunch, double-fry peanuts (150°C then 180°C)
