Ingredients (2 servings):

1.5 lbs chicken breast (diced)

1/2 cup blanched peanuts

10 dried red chilies

1 tbsp Sichuan peppercorns

3 garlic cloves (minced)

1 tbsp ginger (julienned)

Sauce: 2 tbsp soy sauce + 1 tbsp black vinegar + 1 tsp sugar + 1 tsp cornstarch
Key Steps:

Velvet chicken: Marinate in 1 tbsp soy sauce + 1 egg white + 1 tsp cornstarch (15 mins)

Stir-fry peanuts 1 min → set aside

Bloom aromatics: Toast chilies + peppercorns 30 sec → add garlic/ginger

Cook chicken → add sauce + peanuts → toss
