Recipe for Quinoa

Mediterranean Quinoa Salad

Ingredients:

  • 1 cup uncooked quinoa (rinsed well)

  • 2 cups water or vegetable broth

  • 1 cucumber, diced

  • 1 cup cherry tomatoes, halved

  • 1/2 red onion, finely chopped

  • 1/2 cup kalamata olives, pitted

  • 1/4 cup feta cheese, crumbled (omit for vegan)

  • 1/4 cup fresh parsley or mint, chopped

Dressing:

  • 3 tbsp extra-virgin olive oil

  • 2 tbsp lemon juice

  • 1 garlic clove, minced

  • 1 tsp dried oregano

  • Salt & pepper to taste

Instructions:

  1. Cook quinoa: Boil water/broth, add quinoa, simmer covered for 15 mins. Fluff with a fork and cool.

  2. Toss quinoa with cucumber, tomatoes, onion, olives, and herbs.

  3. Whisk dressing ingredients, pour over salad, and mix.
