Recipe for Quinoa
Mediterranean Quinoa Salad
Ingredients:

1 cup uncooked quinoa (rinsed well)

2 cups water or vegetable broth
-
1 cucumber, diced
-
1 cup cherry tomatoes, halved
-
1/2 red onion, finely chopped
-
1/2 cup kalamata olives, pitted
-
1/4 cup feta cheese, crumbled (omit for vegan)
-
1/4 cup fresh parsley or mint, chopped
Dressing:
-
3 tbsp extra-virgin olive oil
-
2 tbsp lemon juice
-
1 garlic clove, minced
-
1 tsp dried oregano
-
Salt & pepper to taste
Instructions:

Cook quinoa: Boil water/broth, add quinoa, simmer covered for 15 mins. Fluff with a fork and cool.

Toss quinoa with cucumber, tomatoes, onion, olives, and herbs.

Whisk dressing ingredients, pour over salad, and mix.
-
Top with feta. Serve chilled or at room temperature.
