1 large onion, diced

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

8 cups vegetable or chicken stock

1 bay leaf

1 tsp SpicenEasy Dried Thyme

½ tsp SpicenEasy Ground Turmeric (enhances colour)

Instructions:

Sauté Vegetables: In a large soup pot, heat the oil or ghee over medium heat. Add the onion, carrots, and celery and cook for 5-7 minutes until softened. Add the garlic and cook for another minute until fragrant.

Combine Ingredients: Add the rinsed split peas, stock, bay leaf, thyme, and turmeric to the pot. Stir to combine.

Simmer: Bring to a boil, then reduce heat to low, cover, and simmer for 45-60 minutes, stirring occasionally, until the split peas are very soft and have started to break down.

Finish the Soup: Remove the bay leaf. For a completely smooth soup, use an immersion blender to puree until creamy. For a chunkier texture, simply mash with a potato masher.

1 tsp cumin seeds

1 tsp ground coriander

1 green chili, slit (optional)

½ tsp garam masala

Juice of ½ lemon

Fresh cilantro, to garnish
Instructions:

Cook split peas – In a pot, combine rinsed split peas and water. Bring to a boil, then simmer 25–30 mins until soft (skimming foam if needed).

Temper spices – In a separate pan, heat oil. Add cumin and mustard seeds; sizzle for 10 secs. Add onion, garlic, ginger, and sauté until golden.

Add spices – Stir in turmeric, coriander, and green chili. Cook 1 minute.
