Creamy Basic Polenta (Serves 4)
Ingredients:

1 cup coarse-ground cornmeal (polenta)

4 cups water or broth (for flavor)

1 tsp salt

2 tbsp butter (or olive oil for vegan)

½ cup grated Parmesan cheese (optional)

Black pepper to taste
Instructions:

Boil liquid – Bring water/broth to a boil in a heavy pot. Add salt.

Whisk in cornmeal – Gradually pour in polenta while whisking to avoid lumps.

Simmer – Reduce heat to low, stirring frequently for 25–30 mins until thick and creamy (if using instant polenta, cook per package instructions, ~5 mins).

Finish – Stir in butter and Parmesan (if using). Season with pepper.
