Persian Joojeh Kabab (Saffron Chicken Skewers)

Serves: 4 | Prep Time: 15 mins (+4+ hours marinating) | Cook Time: 10 mins

Ingredients:

For the Chicken:
  • 1.5 lbs (700g) boneless chicken thighs (cut into 2-inch pieces)

  • 3 tbsp Persian rub (Spiceneasy)

  • ½ cup plain yogurt (or ¼ cup olive oil for dairy-free)

  • 1 tbsp lemon juice

  • 1 large onion, grated (key for tenderness)

  • 1 tsp saffron threads, crushed + 2 tbsp hot water

  • 2 tbsp butter (melted, for basting)

For Serving:
  • Saffron basmati rice

  • Grilled tomatoes/peppers

  • Sumac for sprinkling

  • Flatbread (lavash or naan)

Instructions:

  1. Marinate the Chicken:

    • Dissolve saffron in hot water. Mix with yogurt, Persian rub, lemon juice, and grated onion.

    • Coat chicken and marinate 4+ hours (overnight best).

  2. Skewer & Grill:

    • Thread chicken onto metal or soaked wooden skewers.
