A Note on Blue Peas: You might know them better once they're split! Whole blue peas are the original form of the familiar yellow split pea. They have a blue-grey skin which, when removed and the pea is split in half, reveals the bright yellow interior. Whole peas offer a heartier, more textured result, making them incredibly versatile.

Recipe for Blue Peas
Blue Pea Flower Coconut Rice
(A Fragrant, Naturally Blue Rice Dish – Vegan & Gluten-Free)
Serves: 4
Ingredients:

1 cup jasmine rice (or basmati)

1½ cups water
-
10–12 dried blue pea flowers (for color)

1 cup coconut milk
-
1 tsp salt
-
1 lemongrass stalk, bruised (optional)

1 pandan leaf (optional, for aroma)

Toppings: Toasted coconut flakes, lime wedges, cilantro
Instructions:

Infuse the blue water – Boil 1½ cups water, then steep dried blue pea flowers for 5–10 mins until deep blue. Strain and discard flowers.

Cook the rice – Rinse rice, then cook in a pot with the blue water, coconut milk, salt, lemongrass, and pandan leaf (if using). Simmer covered on low heat for 15–20 mins until liquid is absorbed.

Rest & fluff – Let sit for 5 mins, then fluff with a fork. The rice will turn a beautiful shade of blue!

Serve – Garnish with toasted coconut, lime, and cilantro. Pairs well with grilled tofu or curry.
