Creamy Garlic Butter Pasta Risone with Spinach & Parmesan *(Serves 2-3)*
Ingredients:

1 cup pasta risone (orzo/risoni)

2 cups vegetable or chicken broth (for extra flavor)

1 tbsp olive oil

2 tbsp butter
-
3 garlic cloves, minced
-
½ cup heavy cream (or coconut milk for dairy-free)

1 cup fresh spinach, chopped

½ cup grated Parmesan cheese (+ extra for garnish)

¼ tsp black pepper
-
½ tsp salt (adjust to taste)

1 tsp lemon zest (optional, for brightness)

Fresh parsley or basil, chopped (for garnish)
Instructions:

Cook the pasta risone – In a pot, bring broth to a boil. Add pasta risone and simmer for 8-10 mins until al dente (or as per package instructions). Drain, reserving ½ cup of broth.

Sauté garlic – In a pan, heat olive oil and butter over medium heat. Add minced garlic and sauté for 30 secs until fragrant.

Make the sauce – Pour in heavy cream, reserved pasta water, salt, and pepper. Simmer for 2-3 mins until slightly thickened.

Combine & finish – Stir in cooked pasta risone, spinach, and Parmesan. Toss until spinach wilts and cheese melts (~2 mins).

Garnish & serve – Top with lemon zest, extra Parmesan, and fresh herbs.
