Lemon-Oregano Chicken Skewers

Ingredients:
For the Marinade:
- 
¼ cup olive oil
 - 
3 tbsp fresh lemon juice (or red wine vinegar)
 - 
2 tbsp fresh oregano leaves, chopped (or 2 tsp dried oregano)
 - 
3 garlic cloves, minced
 - 
1 tsp salt
 - 
½ tsp black pepper
 - 
1 tsp honey or sugar (optional, to balance acidity)
 
For the Skewers:

1.5 lbs (700g) boneless chicken thighs or breast, cut into 1-inch cubes
 - 
1 red onion, cut into chunks
 - 
1 bell pepper, cut into chunks
 - 
Lemon wedges, for serving
 
Instructions:

Marinate Chicken:

Whisk all marinade ingredients in a bowl.

Toss chicken in the marinade, cover, and refrigerate for 1–4 hours.
