Recipe for Oregano

Lemon-Oregano Chicken Skewers

Servings: 4
Prep Time: 20 mins (+ 1 hour marinating)
Cook Time: 10 mins

Ingredients:

For the Marinade:

  • ¼ cup olive oil

  • 3 tbsp fresh lemon juice (or red wine vinegar)

  • 2 tbsp fresh oregano leaves, chopped (or 2 tsp dried oregano)

  • garlic cloves, minced

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp honey or sugar (optional, to balance acidity)

For the Skewers:

  • 1.5 lbs (700g) boneless chicken thighs or breast, cut into 1-inch cubes

  • red onion, cut into chunks

  • bell pepper, cut into chunks

  • Lemon wedges, for serving

Instructions:

  1. Marinate Chicken:

    • Whisk all marinade ingredients in a bowl.

    • Toss chicken in the marinade, cover, and refrigerate for 1–4 hours.

  2. Skewer:

    • Thread chicken, onion, and bell pepper onto soaked wooden or metal skewers.

  3. Grill or Broil:

    • Grill over medium-high heat (or broil on high) for 8–10 mins, turning occasionally, until chicken reaches 165°F (74°C).

  4. Serve:

    • Garnish with extra oregano and lemon wedges.
