Recipe Green split Peas

Classic Split Pea Soup (Serves 6)

Perfect for: Meal prep, cozy dinners, or St. Patrick’s Day

Ingredients:

  • 2 cups green split peas (rinsed, no soaking needed)

  • ham hock (or 150g diced bacon/smoked sausage for vegetarian)

  • onion, chopped

  • carrots, diced

  • celery stalks, diced

  • garlic cloves, minced

  • 6 cups vegetable or chicken broth

  • bay leaves

  • 1 tsp dried thyme

  • 1 tsp smoked paprika (optional)

  • Salt & pepper to taste

  • 1 tbsp olive oil

  • Fresh parsley (to garnish)

Instructions:

  1. Sauté aromatics:

    • Heat oil in a large pot. Cook onion, carrots, celery, and garlic for 5 mins until soft.

    • Add ham hock (if using) and sear lightly.

  2. Simmer soup:

    • Add split peas, broth, bay leaves, thyme, and paprika.

    • Bring to a boil, then reduce heat and simmer 45-60 mins, stirring occasionally, until peas are tender and soup thickens.

  3. Shred meat:

    • Remove ham hock, shred meat, and return to the pot. Discard bone and bay leaves.

  4. Season & serve:

    • Blend half the soup for creaminess (optional).

    • Adjust salt/pepper. Garnish with parsley and serve with crusty bread.

  • Skip the ham, use smoked tofu or liquid smoke (½ tsp) for depth.
