Recipe Green split Peas
Classic Split Pea Soup (Serves 6)
Perfect for: Meal prep, cozy dinners, or St. Patrick’s Day
Ingredients:

2 cups green split peas (rinsed, no soaking needed)

1 ham hock (or 150g diced bacon/smoked sausage for vegetarian)

1 onion, chopped

2 carrots, diced
-
2 celery stalks, diced
-
3 garlic cloves, minced
-
6 cups vegetable or chicken broth
-
2 bay leaves
-
1 tsp dried thyme
-
1 tsp smoked paprika (optional)

Salt & pepper to taste

1 tbsp olive oil
-
Fresh parsley (to garnish)
Instructions:

Sauté aromatics:

Heat oil in a large pot. Cook onion, carrots, celery, and garlic for 5 mins until soft.

Add ham hock (if using) and sear lightly.

Simmer soup:

Add split peas, broth, bay leaves, thyme, and paprika.

Bring to a boil, then reduce heat and simmer 45-60 mins, stirring occasionally, until peas are tender and soup thickens.

Shred meat:

Remove ham hock, shred meat, and return to the pot. Discard bone and bay leaves.

Season & serve:

Blend half the soup for creaminess (optional).

Adjust salt/pepper. Garnish with parsley and serve with crusty bread.

Skip the ham, use smoked tofu or liquid smoke (½ tsp) for depth.
