Cranberry Trio Holiday Salad

Ingredients:

For the Salad:

  • 1 cup fresh or frozen cranberries, finely chopped

  • ½ cup dried cranberries

  • ½ cup cranberry juice (100% juice, no sugar added)

  • 1 cup mini marshmallows (optional)

  • 1 cup diced celery

  • ½ cup chopped pecans or walnuts, toasted

  • 1 cup crushed pineapple, drained (or mandarin oranges)

  • 1 cup whipped cream or Greek yogurt (for a lighter version)

For the Dressing:

  • ¼ cup cranberry juice

  • 2 tbsp honey or maple syrup

  • 1 tbsp lemon juice

  • ½ tsp cinnamon

Instructions:

  1. Hydrate Dried Cranberries: Simmer dried cranberries in ½ cup cranberry juice for 5 mins. Let cool.

  2. Mix Salad: In a bowl, combine fresh cranberries, hydrated dried cranberries, marshmallows, celery, nuts, and pineapple.
