  • Prep Time: 15 minutes

  • Cook Time: 40 minutes

Ingredients:

  • 1 cup SpicenEasy Brown Lentils, rinsed

  • 1 tbsp olive oil

  • 1 large onion, diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 3 cloves garlic, minced

  • 1.5 litres (6 cups) vegetable or chicken stock

  • 1 can (400g) diced tomatoes

  • 1 tsp SpicenEasy Dried Thyme

  • 2 bay leaves

  • 1 tsp SpicenEasy Smoked Paprika (optional, for depth)

  • Salt and freshly ground black pepper to taste

  • 2 large handfuls of spinach or silverbeet, roughly chopped

  • 1 tbsp lemon juice or red wine vinegar

  • To serve: Crusty bread and a drizzle of extra virgin olive oil

Instructions:

  1. Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery and cook for 5-7 minutes, until softened. Add the garlic and cook for another minute until fragrant.

  2. Add Base Ingredients: Add the rinsed SpicenEasy Brown Lentils, stock, diced tomatoes, thyme, bay leaves, and smoked paprika (if using). Stir to combine.

  3. Simmer: Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 30-35 minutes, or until the lentils and vegetables are tender.

  4. Finish: Remove the bay leaves. Stir in the spinach and cook for 2-3 minutes until wilted. Stir in the lemon juice or vinegar – this brightens the flavours beautifully. Season generously with salt and pepper.

  5. Serve: Ladle into bowls and serve with a chunk of crusty bread for dipping.

Spicy Brown Lentil Curry (Masoor Dal) (Serves 4)

Perfect for: Weeknight dinners, meal prep, or with rice/naan

Ingredients:

  • 1 cup brown lentils (masoor dal), rinsed

  • 3 cups water (or vegetable broth)

  • 1 tbsp oil (or ghee)

  • onion, finely chopped

  • tomatoes, diced

  • garlic cloves, minced

  • 1-inch ginger, grated

  • green chili, slit (optional, for heat)

  • 1 tsp cumin seeds

  • 1 tsp turmeric powder

  • 1 tsp coriander powder

  • ½ tsp red chili powder (adjust to taste)

  • 1 tsp garam masala

  • Salt to taste

  • Fresh cilantro, chopped (for garnish)

  • 1 tbsp lemon juice (optional)

Instructions:

  1. Cook lentils:

    • In a pot, combine lentils, water, and ½ tsp turmeric. Bring to a boil, then simmer 20-25 mins until soft (no need to soak).

  2. Tempering (tadka):

    • Heat oil in a pan. Add cumin seeds, then sauté onion, garlic, ginger, and green chili until golden.
