Recipe for Brown Lentil
Spicy Brown Lentil Curry (Masoor Dal) (Serves 4)
Perfect for: Weeknight dinners, meal prep, or with rice/naan
Ingredients:

1 cup brown lentils (masoor dal), rinsed

3 cups water (or vegetable broth)

1 tbsp oil (or ghee)

1 onion, finely chopped
-
2 tomatoes, diced
-
3 garlic cloves, minced
-
1-inch ginger, grated
-
1 green chili, slit (optional, for heat)
-
1 tsp cumin seeds
-
1 tsp turmeric powder
-
1 tsp coriander powder
-
½ tsp red chili powder (adjust to taste)

1 tsp garam masala
-
Salt to taste

Fresh cilantro, chopped (for garnish)

1 tbsp lemon juice (optional)
Instructions:

Cook lentils:

In a pot, combine lentils, water, and ½ tsp turmeric. Bring to a boil, then simmer 20-25 mins until soft (no need to soak).

Tempering (tadka):

Heat oil in a pan. Add cumin seeds, then sauté onion, garlic, ginger, and green chili until golden.

Add tomatoes and spices (coriander, chili powder, salt). Cook until tomatoes break down (~5 mins).

Combine:

Mix the tempering into cooked lentils. Simmer 5-10 mins to blend flavors.

Stir in garam masala and lemon juice. Garnish with cilantro.

Serve hot with:

Basmati rice, roti, or naan.
