Ingredients (4 servings):

2 lbs chicken (bone-in thighs/drumsticks)

3 tbsp Berbere seasoning (SpicenEasy)

2 onions (puréed)

1/4 cup niter kibbeh (or sub ghee + 1/2 tsp each fenugreek + cardamom)

4 garlic cloves (minced)

1 tbsp ginger (grated)

1 cup chicken broth
-
4 hard-boiled eggs (traditional garnish)

Injera bread (for serving)
Key Steps:

Caramelize onions in niter kibbeh (30 mins, until dark brown)

Add Berbere + garlic/ginger → cook 2 mins (awaken oils)

Brown chicken → simmer in broth 45 mins

Peel eggs → slit sides → nestle into stew

For extra heat, add 1 tbsp mitmita (Ethiopian chili powder)
