Recipe For Za'atar
Za'atar Manakish (Middle Eastern Flatbread)
*(Makes 4-6 flatbreads)*
Ingredients:
For the Dough:

2 cups (250g) all-purpose flour (or bread flour)

1 tsp instant yeast

1 tsp sugar

½ tsp salt

¾ cup warm water

2 tbsp olive oil
For the Topping:

¼ cup za'atar spice blend

¼ cup extra-virgin olive oil
-
1-2 tbsp water (to adjust consistency)

Optional: sprinkle of sesame seeds

Make the dough:

Mix flour, yeast, sugar, and salt in a bowl.

Add warm water and olive oil, knead for 5-7 mins until smooth.

Cover and let rise for 1 hour (or until doubled).

Mix za'atar and olive oil into a spreadable paste (add water if too thick).

Divide dough into 4-6 balls, roll each into a thin circle (~¼ inch thick).
